No Bake Coconut Balls

Every week at the beginning of the week, I always try to make something sweet, but not too heavy, to have around the house for those last night nibbles or to have with my tea or coffee in the afternoon...heck really for whenever! 

Recently my husband, Tyler, decided to revamp his diet and make his eating a little cleaner, and he needed a sweet treat that would help him stick to his goal.  Insert the creation of these no bake coconut balls.

I have always been more of a chocolate fan myself so most of the things I make involve some type of chocolate; chips, cocoa powder, melted chocolate etc,. However Ty's favorite thing is coconut, and we had an exceptionally large amount of shredded coconut on hand, so why not use it!

These little babies are so quick and easy to make and would be PERFECT for an after school treat for kids or, like I said, a little late night nibble for adults!

When making these no bake coconut balls it is best if you use a food processor.  A blender will work but it does take more time and you will need to blend each ingredient separately and then add them all together to blend at the end.

Make sure to choose Medjool dates for this, other dates are not as sweet and they are also not as juicy which is very important for this recipe, this is the main binding ingredient!  For the honey, try to use local as often as possible, it is going to be the cleanest and also local honey helps with allergies ( BONUS as allergies are TERRIBLE right now up in Boston!)

Ingredients:

6 Medjool dates

1/2 cup of cashews

1/4 cup of pecans

2 tablespoons of honey

1/2 cup of shredded unsweetened coconut 

Directions:
1. Take your medjool dates, open them and take the pits out.  Break them in half and add them all into the food processor.  Pulse on low for a few seconds until the dates have become little chunks.

2. Add in the coconut, cashews, pecans, and honey.  Pulse again for 1 minute until a ball starts to form in the processor.

3. Roll into 1-1 1/2 inch balls, this will make approximately 12-15 balls depending on your sizing.

4. Roll them in a little extra shredded coconut if you want and place in the fridge for up to 7 days or freeze them in an airtight container or bag for up to 2 months.
