As we begin to fully immerse ourselves in the holiday seasons that winter time brings, this also brings along a need for warmer, soul comforting foods. Ginger is a spice that is used in excess during this time of year for the warmth that it gives us and the holiday memories that come all with it.
My tried and true power pancake recipe is unbeatable, and paired with these amazing spices and a dollop of molasses, it is unimaginable combination!!
1/2 cup gluten free oats
1/4 cup low fat cottage cheese
1/8 cup egg whites( or 1 egg)
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon nutmeg
1 teaspoon ginger
2 teaspoons blackstrap molasses
1. Take your oats, cottage cheese, egg whites, spices and molasses. Place the ingredients into a blender( I love my nutribullet!) and blend on high until smooth and creamy consistency.
2. preheat your pan with coconut oil and cook our pancakes for 2 minutes on each side ( or until the middle of the batter starts to bubble. Flip and cook on the other side until the middle no longer wiggles.
3. Serve with toppings of your choice, I love a little cacao powder and coconut sugar for sweetness!
