Power pancakes are the PERFECT post workout breakfast, or even mid morning snack! These protein packed, nutrient rich circles of goodness use only a few ingredients and can be made in advanced, frozen, and then thawed in your toaster( just like those toaster waffles we all used to eat as a kid!)
½ cup of old fashioned oats
¼ cup of cottage cheese ( or 1 ripened banana if you are completely dairy free)
¼ cup of egg whites( if you need more protein substitute this for 1 whole egg)
1 tablespoon of almond milk
1 tablespoon of cinnamon
In a blender, combine all ingredients until smooth.
Take out a big pan and spray with coconut oil. Pour the batter to make two pancakes. Cook on each side for 4 minutes.
Take off and enjoy with your favorite maple syrup, blueberry compote, or peanut butte( my personal favorite!)
** Each batch makes two pancakes. These are wonderful to freeze and then take out when needed and pop into the toaster.

For a dairy free option sub out cottage cheese for one mashed banana
For a grain free option sub out the ½ cup of oats for ½ cup of coconut flour( you may need to add a little bit of almond milk to thin the mixture a bit!)
