Need a quick and healthy breakfast for on the go mornings? Trying to stay away from the traditional toast breakfast? Try these warm, soft yet crisp, sweet potato toasties. Top them with your favorite variations of toast toppings and go on with your morning knowing you have fueled your body for the day ahead!
1 medium sweet potato
1 ripened avocado
1 tablespoon of almond butter
1 teaspoon of honey
1. Slice your sweet potato length wise into four then quarter inch slices. Take these slices and pop them into your toaster. Turn on the highest setting and allow to cook.
2. While the slices are getting toasty, mash your avocado and begin to bake your egg.
3. Pre heat the oven to 300 degrees. To bake the egg, place a small pan on our burner and turn to medium, allow the pan to heat up. Place 1 teaspoon of coconut oil or olive oil into the pan and then crack your egg into this hot oil. Cook on the stove top for 1 minutes just until the egg whites have begun to turn white. Then place the pan into your oven for 5 minutes( depending on how quickly your oven bakes). Allow to bake until the yolk is bright yellow but holds its shape when you shake the pan a little bit.
4. When your toast comes out of the toaster, spread your yummy goodness on top and then enjoy!
